Rhubarb & Ginger Marmalade

Rhubarb with its distinct balance of sweetness and tartness is beautifully enhanced by the warming qualities of ginger. A fantastic start to the day on toast or a croissant and can be used as a glaze for meats and the vegetarian and vegan alternatives. The marmalade is also a great addition to a cheese board, providing a burst of sweet and tart flavour which complements a sharp cheddar or goats cheese.
